I agree with spybreak, though I think it works in everything.
A complex HUD isn't bad, but it shouldn't fill up the screen. It's not a question of immersion for me, it's a question of what I want to see: if I want to pour over menus and spreadsheets, I'll do so, and not play a game.
I think Supreme Commander: Forged Alliance did this well. You only saw build queues when you clicked on a building, and there wasn't something in the way of the action when it wasn't selected.

I think Fable II does it well, the HUD goes away until you need it during battle or dialog NPC parts.

I quite liked Crysis'.

I like huds. I want the DOOM hud back. I want all the information! I don't mind a bit of hiding if it's done well, but as for immersion, 60% of my view field is my desk and walls anyway - I'm not fooling anyone.

I'm all for minimalist or it being completely hidden apart from when I need it. Far Cry 2 does it really well in that it hides everything until it thinks you need to see it (which it's pretty spot on with), and then it's just necessary information.

My favourite HUD is from Supreme Commander though - which contradicts everything I just said. It's so detailed, but because it's an RTS that's good. Literally everything you need to know is on screen, and its lovely.
